In all reality, just pick some little curvy lines on a map and go ride them. Getting lost is half the fun of riding in WNC. Really...
There is plenty of information on the web about the Blue Ridge Parkway, the Cherohala Skyway, The Dragon, and Off-Highway Vehicle areas (and everybody coming to WNC should ride them); but, there are a lot more gems hidden in the mountains.

209 Lake Junaluska to Hot Springs
276 Waynesville to Brevard (be careful as the road is in rough shape now)
Wayah Road - Franklin to Nantahala
19W from west of Burnsville to I-26 in Tennessee
208 and 212 in northern Madison Co.
181 south of Jonas Ridge
74A and 9 from Asheville/Black Mountain south to Lake Lure
Old Fort Road east of 9
226A south of Little Switzerland
Fish Hatchery Road/126 north of Lake James
194 around Valle Crucis
80 crossing the Blue Ridge Parkway
I've heard Double Island Road north of Micaville is nice, but haven't been there yet (or I can't remember...)
